
I have not had an oven for the past year which means baking has well, not happened at all.
Today some really good friends of ours were coming over to fellowship and I wanted to bake that favorite pound cake.
I get all the ingredients together, preheat the oven and realize I have no hand mixer. {Insert a little bit of panic here.} This would usually not be a big deal but trying to blend cream cheese in by hand was NOT an easy task. Trust me I did try to make it work. I went round and round, mushed with whisk, fork, wooden spoon. I tried multiple utensils, filled the dishwasher but those globs of cheese still stared back at me laughingly.
Who wants to take a bite of pound cake and get a mouthful of cream cheese?
Not appealing.
And so, I improvised. I grabbed the green machine aka: my blender.
I threw the bowl of batter into my blender and pushed a button. Yup I pureed my batter. It mixed up in a jiffy and was super smooth pouring out into the bundt pan.
And even better, the gals loved it.
When in doubt, use a blender!
